Day One: Foundations of Bread Making

Begin with a deep understanding of the key elements that define great bread:

  • Recognition of the fundamental ingredients in bread production

  • Overview of ovens and baking temperatures

  • Types of mixers: commercial and home use
     

You will then move into practical preparation:
 

  • Production of starters: Biga, Poolish, and Levain (mother dough)

  • Creation of sourdough (whole wheat and white)

  • Preparation of ciabatta with block fermentation

Day Two: Shaping, Baking & Mastery
 

Build on your foundation with advanced techniques and production:

  • Feeding and maintaining your levain (mother dough)

  • Production of classic breads:

    • Baguette

    • Filone

    • Focaccia

  • Baking and analyzing different bread styles
